Poori

1. Atta (Wheat flour)               : 1 cups

2. Salt                                      : Required quantity

3. Any vegetable oil               : 2 cups

4. Rice powder                      : 1/2 cup

5. Water                                  : Required quantity


Cooking method

                                         Take a bowl shape utensil,put atta(wheat flour) required quatity of salt, 2 or 3 teaspoon oil and 3 tablespoon Rice powder. By slowly adding water stir the wheat flour with hand untill it comes into soft dough. The final consistency should not be too tight (dry) or too soft(wet). The dough should not be sticky (only v lightly sticky)  or feel dry in your hands. Make small balls out of it. These will depend on how big a fryer you have. We intended to make puri in the size of small papadam. Roll it out into small circles with thin-medium thickness. Don't make it too thin else it will come out crispy.Repeat for all dough. Alternatively heat oil for deep frying. Then put these circle shape dough into the oil and when the poori comes into crispy, little brownin colour take out from the oil and put these into tissue paper or news paper to dicrease the oil content of the poori. Repeat the process and you can make many poorees like this.

Few tips for making soft and tasty poori :

  • Do not stack the pooris one above the other after rolling them (before frying).

  • Mix 1 cup of milk and 1-2 tea spns of sooji(rava) with wheat flour while making the poori dough. Keepthe dough aside for sometime. Make poori

  • Mix a little sugar and rice flour with wheat flour while preparing the dough. Make pooris.

  • Prepare poori dough with milk instead of water. 

  • Add one or two drops of red vinegar to oil while frying pooris.

    Masala Curry



    1. Potato                            : 4 or 5 nos.

    2. Big onion                       : 2 nos.

    3. Ginger                           : 1 small piece

    4. Green chilly                   : 2 nos.

    5. Any vegetable oil        : 2 or 3 Tablespoon

    6. Salt                               : Required quantity

    7. Curry leaves                 : few

    8. Turmeric powder         : 1/2 teaspoon

    Preperation

                      Wash well the potatoes and put these into the cooker with 11/2 cup of water and cook it for 3 or 4 whistle may come. wait for coolthe cooker. Cut the onion, green chillies and ginger into small pieces . Take a medium size bowl shape pan, heat the oil. Add the pieces into the pan and stir it well untill it becomes little browny .Carefull that the onion should not be too fry. Then add turmeric powder and 1 cup of water to the pan and close it for 1 or 2 minutes for cooking. This time we can peel the covering of potatoes and cut it into square shape pieces.After few minutes, add the potato pieces and 1 cup of water into the pan and stir it well.Add required quantity of salt to it and cook for few seconds.Turn off the gas. Add Curry leaves to the curry for garnishing.
